Now based in the small picturesque town of Alba-la-Romaine in Ardèche, Sylvain originally trained with Gerald Oustric of Le Mazel before producing his first vintage in 2010. The vineyards are predominantly basalt and limestone and are all farmed organically. In the cellar Sylvain generally opts for carbonic maceration for most of his red wines, and often a small maceration on the whites. Year on year he produces exceptionally well-balanced wines full of interest that also happen to be incredibly stable. There are no additions to any of the wines.
TASTING NOTE: Properly ripe, rounded old vine Chardonnay from the 2020 vintage finds its namesake balance through the addition of leaner, cooler fruit from the same parcel in 2021. After élevage in a blend of old 228 and 300l barrels, a real harmony is struck between the two varied vintages, bringing about a Burgundian charm and opulence to the cuvée.
