
Azienda Agricola COS was founded in 1980 by three friends: Giambattista Cilia, Giusto Occhipinti and Cirino Strange. The acronym of their surnames (Cilia-Occhipinti-Strange) gives rise to the company's name. On a shoestring budget, the three friends vinified the grapes from their parents’ vineyards. Throughout the 80s they sought to resurrect Cerasuolo di Vittoria (Nero d’Avola and Frappato) a previously maligned and underappreciated wine. The journey has taken them away from oak, to cement, and finally into amphora in order to obtain the most aromatic expression of the wines. In 2005 Cerasuolo di Vittoria was upgraded to DOCG status, thanks in part, no doubt, to their pioneering work.
TASTING NOTE: Light ruby coloured in the glass, the aroma has a pretty perfume of wild flowers, red berry blossoms and herbal spices. In the mouth, flavours of raspberry, orange peel and sweet spices emerge with subtle acidity and soft tannins. Beautiful freshness and vibrancy.
