Listan Blanco Tajinaste, otherwise known as Palomino, the main grape of Sherry production, is a salty savoury white with excellent balance and wide appeal.  The Palomino is always quite low in acid so there is 10% Abillo in here to add a touch more freshness.  The wine has bags of character and ages well in the medium term.  It comes from hillside slopes on the north side of Tenerife and therefore heavily influenced by the vientos alisios, or trade winds, which help moderate the climate of the islands.  Pair it with fish, goat's cheese, shellfish or simply with nuts. Serve at 7º - 8º C. Medium bodied dry white wine. 

Tasting: Light yellow in colour. The nose reveals the typicality of the Listán blanco. On a slightly smoked background, pleasant floral notes and aromas of pineapple, apple and fennel. In the taste phase it is fresh and smooth, with a well-balanced acidity.
