
This natural Pet Nat is made by bottling the wine when it’s around 90% fermented, with the final 10% of the fermentation in bottle resulting in beautiful soft creamy bubbles. The wines made via the Entr’acte Intermission method meaning that previous vintage wine (in this case Pinot Noir) is blended with brand new vintage wine (2022 Chardonnay) - all from their own estate in Monmouthshire.
Big notes of bruised apple, sour red fruit, tangerine, and herbs with a tangy/tart finish. To drink this in any other manner than extremely cold is criminal.
