Pol was greatly inspired to make this wine by the only other example of a skin-contact Torrontes being made in Argentina. He greatly admired the wine which he felt successfully demonstrated the potential of what the variety could express when the skins are showcased. However, Pol spent several years before making this wine in search of the right vineyard that would allow him to make a wine with comparatively more elegance and acidity than that demonstrated by the existing example. In the end he came across what is the only parcel of Torrontés in the famous Gualtallary region, known for its higher altitudes, calcareous soils and cooler climate. At the moment of making the wine, Pol was convinced that a longer maceration on the skins would achieve the character he was looking for, so he decided to macerate the wine for at least 8 months...in the end it spent 10 months on the skins.
TASTING NOTE: The wine has a versatile ability to pair with many different foods due to the aromatics of the bouquet, the dryness, the high acidity, and the tannicity.
